sallea is a start-up from ETH Zürich producing highly porous, edible 3D substrates, so-called scaffolds for the cultivation of meat and fish. We developed a scaffolding platform to manufacture tailored scaffolds for our customers’ process (meat & fish cultivator companies) to unlock their full potential to cultivate fully textured whole cuts. Additionally, our scaffolds can be used to add taste and nutritional value to their end product.
